Skin. Snowskin is soft, cold and slightly stretchy; it is never baked. Semi-mochi, which we use, is chewier and closer to Japanese mochi. Traditional baked skin is rare with durian because heat and fresh durian pulp do not get along. If you have only ever had baked mooncakes, any option on this list will eat very differently.

Varietal. Mao Shan Wang dominates this list for a reason: creamy, intense, familiar. D24 is milder and a little more bitter. Black Thorn is deeper and more floral; on this list you will find it in our gift set and in Goodwood Park’s snowskin range.
